My mind is being flooded with lots of new recipe ideas. Every time I enter my pantry and look around, a new ingredient inspires me to try something new. But on the other hand, I am just so happy sitting around, reading books, browsing the internet and playing with my daughter and generally relaxing that I do not really want to cook, style, shoot and write. All my fellow bloggers know that there is nothing easy about this process! I only wish I has a couple of assistants to help me out with all this.
I have had these beets in the refrigerator and the recipe in my head for almost a week now. I kept thinking of making wholesome beet fritters, which are perfect as a quick snack, a healthy breakfast or even a light lunch/dinner served along with a salad. I have always loved the look of colorful fritters filled with lots of veggies but most fritter recipes have eggs in them and I don’t eat eggs. So I created this recipe for all of you who don’t eat eggs.
Of course they are very different compared to the traditional egg based fritter recipe but they are extremely healthy and tasty. These fritters here have chickpea flour, finger millet flour, red rice flour and flax seed powder as the base! That combined with lots of grated beets makes them super power packed! I spiced them up a little to add more flavor to the fritters but if you want you can keep it simple too. If you want to avoid biting into whole spices, you can use ground spice powders too. I suggest a little bit of mustard, some cumin powder and pinch of gharam masala for milder version of this. Add more veggies and greens to them, try different herbs and spices… possibilities are endless. You have a base recipe on hand, which can work pretty much with any combination!
These fritters taste great with lots of accompaniments. A simple coleslaw, a veggie or green salad, a dollop of yogurt or cream etc are good accompaniments. I have tried them with spicy pickles, sweet fruit chutneys and honey. It goes surprisingly well with all of the above. Stick them in-between your bread along with some veggies to make a lovely veggie burger.
- 1 cup grated beets/ beetroot
- 1 tbsp red rice flour
- 1 tbsp flax seed powder
- 1 tbsp chickpea flour
- 1 tbsp finger millet flour
- ¼ – ½ tsp dry red chili powder
- 1 tsp cumin seeds
- ½ tsp yellow mustard seeds
- ½ tsp nigella seeds
- 1 tbsp finely chopped cilantro
- Salt to taste
- Olive oil/Coconut oil to fry on a griddle
Combine all the ingredients and stir well. Add water slowly to make a a thick pancake like batter. Keep stirring to avoid lumps.
Heat a griddle and drizzle some oil in it. You can use anywhere from ½ tsp to 1 tbsp of oil per fritter. More oil means crisper fritters though. When the oil is hot, spoon the batter into small circles and spread them a little. I sprinkled them with some yellow mustard seeds because it looked very pretty. You can use nigella seeds or finely chopped cilantro etc for different colours. Cook them on both the sides and serve immediately.
