When it’s chilly and cold outside I always crave for some spicy hot food. Spices warm my body and lift my spirits up. Bangalore has been quite cold for a couple of weeks. By ‘cold’ I mean 18 to 20°C! I know some of you are laughing right now but it’s cold enough for me to reach for a warm jacket!

I was craving something really spicy today and I wanted to cook something really quick and easy. I made my usual noodle stir fry with bell peppers. To make it spicy I added a generous dollop of red chili paste to it. What difference it made! This noodles is really HOT. This is not for the faint hearted guys! A bowl of this will have you sweating… The red chili paste I used is basically dry red chilies soaked in vinegar and then ground into a corse paste. It’s super hot with a hint of vinegar. This paste is always in my refrigerator to add the much needed ‘punch’ to soups, sauces and stir-fries. It lasts forever as a tiny drop goes a long way.

It took me less than 15 minutes to throw everything together so this is a perfect weeknight dinner. Make this faster by using instant noodles instead of regular noodles. I used bell peppers but you can try other vegetables and greens that you have on hand. carrots, bok choy, baby corn, mushrooms, broccoli or any other vegetable you like. If you can’t handle this much spice, try it with a milder chili sauces or even sweet chili sauce for a different taste. Using soba or whole wheat spaghetti will make this a more nutritious meal. Replace noodles with some left over rice and you have a tasty spicy fried rice ready.

Serve with a big glass full of juice. Trust me you'll need it!

Ingredients:

  • 2 cups of cooked noodles of your choice
  • 2 cups of mixed bell peppers, cut into strips.
  • 2 tbsp oil peanut oil
  • 2 tbsp of finely chopped garlic
  • 1/2 or 1 tsp red chili paste
  • 1 tbsp rice wine vinegar
  • 2 tbsp soy sauce
  • 1 tbsp sugar(optional)

 

Cook your noodles according to the packaging directions and keep it aside.

Heat oil in a wok/pan. When it’s hot add the garlic. Fry for a few seconds till slightly golden, add the chili paste, rice vinegar, soy sauce and sugar (optional). Mix well till everything is boiling together. Add the bell peppers and fry till almost cooked but still a little crunchy. Now add the cooked noodles and toss till everything is combined.

Serve hot with a big glass full of juice. Trust me you’ll need it.

    This looks so simple and tasty! I’m always on the lookout for spicy dishes. Tonight while making soup for dinner, I added lots of gochujang paste to make it extra spicy. Love what the red pepper paste does. Do you use Korean pepper paste or another kind?

      I used homemade chili paste but I think any kind of chili paste would be great in this noodles.

    This looks amazing! Can you post the recipe for the chili paste? I know you said dried red peppers plus vinegar, but if you could suggest the proportion of red pepper to vinegar, that would be helpful. Thanks!

      Hi, I basically soak dry red chilies in enough white vinegar to cover it, let it sit till the chilies are soft. Then drain the vinegar and grind the chilies with the same vinegar to make a thick paste.

    No worries about being laughed at, I feel cold easily too; and 18-20 degrees Celsius does sound cold compared to my 30-34 degreees Celsius here these days :p
