
Green Mango Relish with Whole Spices
One reason to love summer is fruits! And the best of them all is of course Mango, the king of fruits
We are gorging on the freshest and juiciest summer mangos these days. They are delicious not just when they are ripe and sweet but also when they are unripe, green, sour and crunchy! Green mango slice with a sprinkling of salt is a favorite guilt free snack! They are also perfect for pickles, sauces and relishes. Preserved in these forms they can be enjoyed for the rest of the year when they are not freshly available in the market. India has several great mango pickle recipes, sweet or spicy.
Here’s a recipe for a simple relish that is quick and easy to make. I have cooked grated green mangos in sugar syrup with whole spices, cinnamon and cloves. Flavors are simple and colour is a beautiful golden yellow.
They are great as a spread on various breads and crackers. I also use mine is sandwiches and salad dressings for extra flavor. If stored in an airtight container in your refrigerator, it will stay fresh for a few weeks.
Enjoy this simple recipe as making relish and pickles don’t always have to be complicated and time consuming!!

Green Mango Relish with Whole Spices

Sweet Mango!
[typography font="Cantarell" size="24" size_format="px" color="#b36f98"]Ingredients:[/typography]
- Sugar – 2 cups
- Water – 4 cups
- Grated green mango – 4 cups
- Cloves – 10-12
- Cinnamon – 4 inch stick
Place sugar water and the whole spices in a vessel and bring it to a boil. Add the grated green mangoes and let it simmer for 5 to 10 minutes. When the mango starts to disintegrate, turn off the heat. I like to keep it a little watery as it tends to get thicker when it cools down.
Once cool, store this in an airtight container in the refrigerator.

Thanks Misha! It should last for a few months when refrigerated but I can’t really say for sure as I haven’t stored it for that long! we usually end up eating it all in weeks! lol
