This month has been really good for ‘Love Food Eat’!
There have been lots of new and exciting things happening! After my post for ‘Honest Cooking’ now it’s a post for ‘One Green Planet’!!
I am very honored to tell you all that I am now a monthly columnist for ‘One Green Planet’!
‘One Green Planet’ is an online ecosystem that draws links between the world of ecology, the environment, animals and vegan living. We are a platform that brings together a range of distinct voices, unified by a commitment to spreading good ideas that benefit people, animals and the planet.
When they contacted me inviting me to be a monthly contributor I was completely thrilled! They have some very senior and well known names of the vegan community writing for them and it was a great opportunity for me to be a part of them!
My first monthly column for them is a simple salad recipe. This Indian Winged Bean salad according to me captures the essence of my blog and food. It’s healthy, easy to make and of course delicious! . Winged bean is nice and crunchy in this great salad and coconut adds a lot of juicy sweetness to it. It’s seasoned simply with some fresh lime juice and a typical south Indian ‘tempering’ of coconut oil, mustard seeds, dry red chili and a few fresh springs of curry leaves.
