Sometimes simple things in life are the most satisfying!

Here is a pasta dish which takes not more than 10 minutes to make. It has very few ingredients. Well tomatoes, garlic and chili flakes to be precise! This has no blanching, pealing or mashing involved which makes this a perfect weekday meal.

You can use any pasta here, penne, fussilli or spaghetti, whatever you have in hand. I love the overpowering garlic flavor in it but if you are not a fan of it, feel free to cut it down to half. A good sprinkling of chili flakes takes the flavor to another level but if you don’t like it too spicy you can use less chili flakes or even replace it altogether with pepper.

The pasta tastes great by itself but it can be made more nutritious by adding some stir fried vegetables as topping. I use mushrooms, bell peppers, zucchini, even frozen corn or peas. Vegetables add extra colour and crunch to this dish.

  • 2 cups of Pasta
  • 6-7 big Tomatoes cut into Cubes
  • 10-12 Pods of Garlic
  • Mixed Dry Italian Herbs
  • Chili Flakes
  • Salt and Sugar
  • Olive Oil

Boil the pasta with a pinch of salt. Drain the water and toss it with some olive oil. This will prevent it from sticking.

In a big pan heat some olive oil. Add freshly pounded garlic to it. Fry only for a few second. Don’t let it brown too much.  Add the tomatoes. I like chunks of tomatoes in it but if you want you can also finely chop it. Mix well and let it simmer for 5 mins till the tomato is cooked well and starts disintegrating. Add salt and sugar according to taste. Add the pasta and mix well. Season with mixed herbs and chili flakes.

Serve with some garlic bread and some vegetable topping for a hearty meal.
