Pineapple Mint Punch

 

After endless cooking, eating and partying, I must admit it that I have been a little too lazy to blog. I can’t believe that I have posted only 2 recipes in over 2 weeks! I had told myself that I am not going to obsessively blog this year and enjoy more time for myself to sleep more and relax but I do feel guilty for not blogging often. Let’s just hope that I get enough rest and sleep and get back to being my usual self as soon as possible.

Bangalore weather right now is perfect in one word. From past few days we have been blessed with cold mornings and evenings with bright sunny afternoons.  Weather is not helping me in being more productive! I feel like doing nothing all day long. One of these chilly sunny afternoons I made myself this Pineapple Mint Punch. It’s never too cold for a cocktail! In fact I usually open a bottle of beer when it’s warm and enjoy a tall glass of cocktail on cold evenings.

Super simple yet very impressive!

 

I don’t think I really need to tell you all how good this drink is. Sweet pineapple with fresh mint is one of the best flavor combinations EVER. This super simple punch is really easy to make and can be pretty impressive for a party. I love the beautiful yellow colour of this drink with specks of vibrant green in it. You can skip the rum to make it a non-alcoholic drink.

Pineapple mint punch was just what I needed to make me more lazy! Hope you are all enjoying the lovely January weather in your part of the world.

Pineapple mint punch

It’s never too cold for a cocktail like this.

 

IIngredients:

  • 1 cup sugar syrup
  • 2 cups fresh pineapple
  • 5-6 springs of fresh mint
  • 2 cups of club soda
  • 1 cup of white rum
  • Juice of 1-2 limes

 

Pour the sugar syrup into a tall jar. Crush the fresh pineapple and pour it into the jar with its juices. Tear the fresh mint leaves gently and add it to the jar. Squeeze the lime juice into it. Add the rum and top it with the club soda. Refrigerate it for about an hour and enjoy it with some icecubes and a spring of fresh mint.
