Summer is here!

All of February was great, pleasant during the day and slightly chilly in the evenings and suddenly it’s march and it’s summer! It almost felt like weather changed overnight and not in a good way!

It was not a gradual change where we are happy and exited about changing our menu form comforting soups and curries to light summer meals. It was almost like a rude shock where one really doesn’t want to eat anything! At least in my case that’s what is happening!

I have not been inspired to cook much at all… Past few days I wake up thinking I will cook something for the blog but as the day goes by I feel like just drinking water and eating fruits. So I decided that I will share a quick refreshing drink recipe with you all today. I have been reaching out to all squashes and syrups I have in my pantry to make some simple drinks to help me cool down. I got my hands on some pomegranate paste and rose water bottles that I have been treasuring from a while. A friend bought them for me on her road trip through Iran and it’s good stuff!

Pomegranate paste I am talking about is not some artificial colored/ flavored syrup. What I buy in India as Pomegranate paste is nowhere close to this. It’s dark, sticky and slightly fermented. I would say it tastes like Balsamic reduction with a hint of pomegranate fruitiness. I love it’s flavor! Combined with ever so wonderful rose water this drink is uniquely refreshing. I love how the cooler turned out. It’s sweet, slightly tart and has a deep dark amber color instead of the expected pomegranate pink shade. The pomegranate paste itself is not sweet enough so I sweetened it with white sugar but honey can probably be interesting too. Sweeten it according to your taste.

Replace the pomegranate paste with the best quality pomegranate syrup you can get and make this drink this summer. Make a single serving for yourself when you need something cold and refreshing and get transported to magical middle east immediately!

I made it this afternoon and din’t really have the patience to set everything up for a ‘photo shoot’ with props and garnishing. Not like I am usually better but  I just took a couple of quick shots and drank it all up in minutes!

There is no recipe really!  I simply added 1 tbsp each of white sugar, pomegranate paste and rose water, topped it with lots of ice cubes and filled the glass with cold water. Stir well and enjoy!

    This sounds so refreshing. I understand about finding things to post about. It’s definitely challenging when you sometimes just want fruits and veggies in raw form. I love this photo of the cooler!

    I need to get pom paste — the only ones I can find is pom molasses. Your neutral styling is just as good as your usual styling :)

    That sounds like a fantastic combination of pomegranate and rose – such beautiful flavours. I make something similar to this, but since I can’t get pomegranate paste here, I usually just use the Middle Eastern pomegranate molasses.

    Have been looking out for the pomegranate paste for long..lost hope…been used extensively in middle east cooking. Planning to make my own version soon, it stays for long. This refreshing cooler is sure to become my summer fav. too.
