
Raw Beet Salad with Peanuts and Coconut
From a past week or so I have stayed away from cooking… I have avoided all stews and bakes and curries! We are just about a couple of days away from monsoon and the waiting is killing me! A nice salad or something cool and easy to make is what I carve for these days.
There is something wonderful about salads! They are filling, satisfying and very very versatile. They are like a white canvas with endless possibilities.
Growing up I was never really exposed to salads but now it’s a different story. One vegetable that I was never too fond of was beets! I always avoided them in curries. I disliked its sweetness more than anything. But I changed my mind when I tried beets in salads!! Now I believe that if I don’t like a particular vegetable may be it’s because I still haven’t found that perfect recipe!
I personally think that beets are a lot tastier when they are raw. The sweetness and the crunch are perfect for a salad. I have paired sweet beets with raw peanuts. I soaked the peanuts which totally changes its texture and taste. Adding fresh coconut gives this salad a new twist. It’s a very simple dish but the combination of these three ingredients is what makes it so tasty. A hint of fresh lime juice adds a lovely tang to the sweet salad. I sprinkled some chopped cilantro and had the best Vegan Raw beet salad ever!

Raw Beet Salad with Peanuts and Coconut

- Beets cut into julienne strips – 1 cup
- Raw (unsalted) Peanuts soaked in water – ½ to 1 cup
- Freshly grated coconut – ½ cup
- Finely chopped cilantro
- Fresh lime juice
Soak the raw unsalted peanuts in water for about 20-3o minutes. When it looks pink and juicy it’s ready to be used. Peel and cut the beets into julienne strips.
Mix beet, peanuts and coconut together. Sprinkle finely chopped cilantro and squeeze some lime juice on it and Serve immediately!

This looks delicious! I make a similar salad using my spiralizer for the beets to make “noodles”! I also use coconut but have never tried it with peanuts- what a wonderful idea! Thanks for the recipe

I can’t wait to try this salad! What a creative combination. Makes me want to try it with coconut chutney. It’s still a bit gloomy in the Pacific North West, but I’m headed to New York where this will be perfect. I can see this being my go-to salad without even trying it. I LOVE RAW BEETS! I’m with you on the sweetness factor. Cooking seems to tame all that nice earthiness and crunch.

Chickpeas is also a great idea! it will be creamy instead of crunchy (peanuts) which can also be good!
