Shell Beans Pasta with Cilantro Lime Vinaigrette


I am back in Bangalore, my home and my kitchen and life only got busier. I have succeeded in slowing down my blog a bit and I have been enjoying this twitter and blog free time J and cooking and eating it right away without having to take photos of it! lol… but of course I definitely can’t get blogging out of my mind. Every new recipe I try I am so tempted to take pictures and blog about it!

Yesterday I bought some fresh shell beans from my vegetable vendor and immediately I knew I wanted to blog about it. I had lots of cleaning and organizing to do and had to head out for some shopping. Between all this and a 2 year old who NEEDS attention constantly I just had very little time to cook. Once again I had to cook something easy and fast with shell beans. My daughter loves pasta and I love simple salads. I decided to combine both. A wholesome pasta salad with Shell beans!

I put two pots on the stove with boiling water, one for beans and one for pasta. When they were cooked I had simple vinaigrette ready with some fresh green fragrant cilantro (my all time favorite), punjent garlic  and beautiful yellow lemons. Toss the green lemony vinaigrette with the freshly boiled beans and pasta and you have a warm salad ready! S

Shell beans are sweet, plump and very versatile. They are great as they don’t need to be presoaked and cook much faster than dried beans. Combined with pasta they can make a filling meal. Look out for shell beans in your local market, it’s right now in season in Bangalore and I love in spicy curries.

Once again fast doesn’t have to mean something out of a box, unhealthy or tasteless! I think a little bit of creativity can help you in preparing simple flavorful and nutritious food in no time!

  • 1 cup pasta
  • 1 cup shell beans

Vinaigrette

  • 4 tbsp fresh lemon juice
  • 6-8 tbsp olive oil
  • 2 cloves of garlic
  • A handful of fresh cilantro
  • A pinch of salt

 

Boil pasta and shell beans separately and cook till soft. Keep them aside

Blend all the ingredients for the vinaigrette together till you get a creamy green mixture. I like mine to be nice and lemony with a strong garlic and cilantro flavor. You can adjust the potency according to your taste.

Combine both and serve it warm!
