I am yet to come across a person who does not like Potato! There is something about this vegetable that everybody loves! It is THE comfort food in most cultures all over the world. You can read health benefits of Potato here.
But often potato is considered un-healthy. I think the problem is not Potato but the way we cook it. Mostly it is fried or cooked with butter/ oil. Salads always come with some calorie laden mayo based dressing.
Here is a recipe which is for a change healthy and light. Potatoes are boiled, not fried! And there is no mayonnaise and instead there is healthy yogurt! This is one of my favorite summer recipes as with a bowl of rice it makes a cooling meal.
Here is a fresh potato salad recipe which is quick and easy to make.

- Boiled and mashed potato 1 cup
- Yogurt 2 cups
- Finely chopped onion ½ cup
- Red or green chili
[typography font="Cantarell" size="24" size_format="px" color="#b36f98"]For Tempering:[/typography]
- Mustard seeds
- Dry red chili
Mix mashed potato, yogurt, finely chopped onion and chili in a bowl. Add salt for taste.
Take a little bit of oil in a pan, add mustard seeds to it. When it starts spluttering add the dry red chili. Turn off the heat and add it to the potato, yogurt mixture.
It really can’t get simpler than this!
