I still haven’t recovered from all the eating I have done over the weekend! It almost feels like I have been only cooking and eating for the past few days.
Sunday was my cousin’s birthday who turned 15 and I baked a pink cake for her unlike my usual ‘healthy’ cakes, this was a white flour + butter +white sugar vanilla cake with a strawberry cream cheese frosting. I enjoyed baking it and everybody enjoyed eating it
More than 15 cousins and friends had ganged up and we made Pav bhaji (Bread served with a spicy vegetable mash) for everybody. Monday I had more family over for dinner and we made TONS of momos! I made chicken momos for non vegetarians and spinach and cheese for vegetarians. Both turned out fabulous and we ate over a 100 momos! Lol… I baked my Tomato Cake and as usual it was a HIT!
I had also made a MASIVE pot full of soup with some noodles for dinner but after the momos and the cake none of us had any space left for soup. Today I have a pot full of soup and a BIG bowl full of noodles sitting in my kitchen…
I wanted to make a noodle stir fry different from my usual recipe. I was in mood for some Thai inspired noodles and I didn’t really have any fresh spices and herbs needed for authentic Thai stuff. So I made my own version of a quick Thai peanut sauce, toasted and crushed some fresh peanuts and quickly stir fried noodles with some simple veggies form my refrigerator. This might sound simple but it resulted in an outstanding noodles recipe! This is one of the most delicious peanut sauces ever! It’s the simplest sauce to make and takes less than a minute to put together!
Today’s Noodles with peanut sauce is a very easy recipe and healthy with fresh vegetables, peanuts and peanut butter. A quick dinner recipe if you already have some boiled noodles/spaghetti on hand. Great for packed lunches, picnics and parties. Peanut sauce makes the whole dish creamy and fresh peanuts add a lovely crunch. This colorful, flavorful noodle dish also happens to be vegan!
This according to me is the tastiest way to eat noodles! So PLEASE make it and you will love me for sure

Simple ingredients

Easiest peanut sauce recipe ever!

Noodles I already had

Slow roasted peanuts

peeled and crushed

Now that’s what I call delicious!

- 2 cups noodles/spaghetti
- 1 cup fresh mixed vegetables of your choice
- 1 tbsp sesame oil
- 1tbsp soy sauce
- A handful of fresh basil
- 2 tbsp crushed peanuts as topping
[typography font="Cantarell" size="24" size_format="px" color="#b36f98"]Peanut Sauce:[/typography]
- 1 tbsp peanut butter
- 2 tbsp sesame oil
- 2 tbsp soy sauce
- 1tbsp brown sugar
- 1tsp sesame seeds
Boil the noodles according the directions given on the package and keep it aside. Clean and chop your vegetables. I used green pepper, baby corn and carrots.
Heat the oil in a pan and add the chopped vegetables. Do not cook it for too long as we still want the vegetables to be crunchy. Fry for a couple of minutes and add the noodles. Now add the soy sauce and fresh basil, stir well and turn off the heat.
For the peanuts, I used dry peanuts and roasted them myself. After roasting them till the skin turns slightly brown, peel them and crush them a mortar and pestle.
To make the peanut sauce simply combine all the ingredients in a bowl and mix well. It really is that easy
To serve – Place the hot/warm noodles in a bowl. Pour a spoonful of the peanut sauce and top it with some crunchy crushed peanuts.

This was a BIG hit in my home. My husband begged me to make it again a week later. The second time I added chicken and used rice instead of noodles. Very good both ways. Honestly, I think this sauce would make drywall taste good!

Made this last week and even my uber-picky toddlers gobbled it up. I used whole wheat spaghetti, carrots, onion, broccoli, and I omitted the oil & used water instead. I also added sriracha to mine. Definitely a make again. Thanks for posting!

I just made this and I think there’s too much sesame oil for my taste, the sauce was really good, but once I had stir fried the veggies in the sesame oil it kind of overpowered EVERYTHING. I think I might make this again but I will probably just stir fry the veggies in Canola Oil or Pam
